These baked breakfast muffins can be served hot or cold. If you like, you can also add some cheese on top.

6 eggs
Chopped fresh tomatoes
Baby spinach
Optional add ons:
Broccoli
Sweet peppers
Onion
Method:
Mix all ingredients in a bowl
Pour the batter in a lined muffin tray
Bake in a pre-heated oven at 180 degrees for 20 minutes.
